    Zucchini Breakfast Quiche:

    Ingredients (2 servings):

    1. 1 large onion
    2. 1 zucchini
    3. Half an eggplant
    4. 5 oz. fresh mushrooms (around a half a carton)
    5. Fresh parsley – to taste
    6. 4 eggs
    7. 1/2 cup milk
    8. 1/4 cup shredded cheese
    9. salt, black pepper, garlic and other spices to taste

    Instructions:

    1. Fry vegetables and spices in a frying pan (minimal oil) on medium flame until soft.
    2. Place vegetables into an 8 by 8 pan.
    3. Mix the eggs, milk and shredded cheese into the vegetables.
    4. Add some more shredded cheese on top.
    5. Cook on 350 for half hour
    6. Eat and enjoy!
