    Hamantashen:

    1. 3 Eggs
    2. 1 cup sugar
    3. 3/4 cup oil
    4. 1/3 cup apple juice
    5. 5 to 5 1/2 cup cups flour
    6. 3 tsp vanilla extract
    7. 1/8 tsp almond extract (for allergies, change to vanilla)
    8. 3 tsp baking powder

    Instructions: 

    1. Beat eggs and sugar until creamy.
    2. Add oil and beat.
    3. Add juice and extracts.
    4. Add baking powder.
    5. Gradually add flour until it becomes a good dough consistency.
    6. Fill with favorite filling.
    7. Bake at 350 for approx. 10 minutes (until bottom is golden).

    (These freeze very well).
