After holding shechita runs in a number of countries across world, Eliyahu Ezagui has produced his own shechita knife that is easy to sharpen.

The shechita knife, oftentimes referred to as a chalif (chalef/chalof) or sakin, is a specially designed and custom-made tool.

Its design, maintenance, and use help the shochet avoid performing one of the chamisha poslei shechita: five disqualifying acts, in terms of “heloch” known as שהיה – making a pause. דרסה- pushing and not shechiting. חלדה – in a situation that you can’t see the shechita from beginning till the end. הגרמה – the shechita is not in the right place, or too high or too low. עקור – in a scenario that you are ripping and not shechiting. (The laws can be found for more details at length in Shulchan Aruch Yoreh Daya chapters 23 and 24).

Ezagui designed the new knife after shechting around the world, just to name a few, Jamaica, Belize, Nicaragua, Dominican Republic, Ecuador, Cuba, Peru, Chile, India, Russia. Helping communities with kosher meat, came to design a new knife for poultry.

Each kosher knife is designed to be at least twice the length of the neck of the animal being slaughtered. This ensures that a slaughterer has sufficient space to perform a sawing motion during the (cut) shechita Otherwise one might chop down on the neck of the animal, disqualifying the (cut) shechita known as “drasah”.

In accordance with this custom, the brand new (knife) chalif has been designed in a way that it Is easy to sharpen for beginners that are learning the laws of shechita the knife stays sharp and in addition a special grip handle.

The (knife) chalif has been checked by rabbis and used by shechita’m. Additionally, the end of every slaughter knife is squared to help avoid stabbing into the neck of an animal “haladah”. Pictured below is our Beginner’s Poultry Knife and Professional Shechita Knives for poultry, only $120 for the knife and handmade leather case.
